Tandoori-ish Cilantro Chicken

Spice Mama's Sweet Heat Cilantro is anything but simple. It starts off sweet, with a bit of honey to whet your appetite. It follows with the most aromatic and complex blend of South Indian spices - cumin, coriander, Indian red chili - with some California influence of paprika, allspice, tomato, and sherry vinegar. We want your dinner to come together in less than an hour, but we want the flavor to taste like it took hours to create (and it did take hours. just not your precious hours!) Below, find the recipe for Sweet Heat Cilantro-Yogurt marinated chicken. You get to choose whether you marinate it for 5 minutes or 24 hours - it just depends on how far in advance you want to prepare. Quick note*: the chicken in the picture above? Marinated for 5 minutes. Cook time is approximately 30-40 minutes, just enough time for you to slip into your PJs after work and have that first glass of wine.

Spice Mama Sweet Heat Cilantro, half jar (4 oz)

1 cup plain greek yogurt (nonfat or full fat)

4 organic chicken legs

5 cloves garlic

1/4 cup roughly chopped parsley (optional)

Preheat oven to 425F. Combine Sweet Heat Cilantro with greek yogurt, and coarsley chopped garlic. Mix well. Smother yogurt sauce all over chicken legs. Marinate for 5 minutes - 24 hours. (24 hours means max tenderness and flavor, but seriously, 5 minutes on a weeknight yields a totally lovely dish.) Bake for 30 minutes. If not yet fully cooked, add another 5-7 minutes onto cook time, until juices run clear. If skin isn't a bit charred, stick under a 500F broiler for 2 minutes.
